summer. Looks like I am going to have to get the pool out for Georgette and the
boys, their feathers are already wilting!

Louis Evans'
Creole Cookbook
Executive Chef of the Caribbean Room at the famous Pontchartrain
Hotel for 18 years, Evans served what some believe to have been the
best Creole dishes in New Orleans for over 20 years.
His years of expertise have been drawn upon here to present Evans'
own collection of recipes-no secrets withheld or details left out.
1 1/2 lb. ground beef
1 medium onion, chopped
1 clove garlic, minced or
1/8 tsp. garlic powder
2 (8 oz.) cans tomato sauce
1 (14 oz.) can stewed tomatoes
1 tsp. dried crushed oregano
1 tsp. Italian seasoning
Salt and pepper, to taste
1 (10 oz.) pkg. frozen chopped spinach, thawed
1 (16 oz.) pkg. bow-tie pasta, cooked and drained
1/2 C. grated Parmesan cheese
1 1/2 C. shredded mozzarella cheese
In a large skillet over medium-high heat, brown ground beef, onion
and garlic. Cook until onion becomes clear and soft, approximately 20
minutes.
Drain excess fat. Transfer meat mixture to crock pot. Add the
tomatoes, tomato sauce, oregano, Italian seasoning, and salt and
pepper, stirring to break up stewed tomatoes. Cover and cook on LOW
for 7 to 8 hours or on HIGH for 3 1/2 to 4 hours. During the last 30
minutes of cooking, turn on high if on low. Stir in the cooked pasta,
spinach and cheese. Serve immediately when mozzarella cheese is
melted. Serves 6.

sauce from Crazy Johnnie's restaurant in Metairie. Its reddish in
color and spicy. I'm told that its the same sauce that is used on
their Barbeque Shrimp. This sauce is great and would also work on
chicken and fish. Any ideas???? Thanks for the wonderful site.

Beaudreaux
Beaudreaux decided he wasn’t making enough money. He and his wife
were working very hard, Beaudreaux spending all day in the swamps
cutting cord wood, and his wife trapping and shooting whatever they
could kill for dinner. They were getting very tired of eating possum
every night. Beaudreaux had talked with a couple of friends who told
him he should go to the hardware store and see if he couldn’t find a
way to make a better living.
Beaudreaux took off a day to pole his way down a bayou to town to
visit the hardware store. When he got there, Beaudreaux saw that
Guidry and Lalamundier were already there checking out the chainsaws.
Guidry was very excited about a new chainsaw...
