The sun is out again today, thought it was going to be quite a while
before we saw it!
It sure feels like Spring is here, but in Louisiana you never know, it
may still freeze again. :o)

Today's Recipe:
Quick and Easy Fried Oysters
1 to 2 cups dry pancake mix (any type)
1 pint shucked Maryland Oysters, drained
Fat or oil for frying
Salt
Cocktail or tartar sauce
Put pancake mix into large shallow bowl. Add Oysters, a few at a time
and toss lightly until well coated. Shake off excess breading in wire
basket. Fry in deep fat at 350 F until golden brown, 1 1/2 to 2
minutes. Drain on paper towel.
Repeat process until all Oysters are cooked. Salt lightly and serve
with cocktail or tartar sauce.
Makes 4 servings, about 8 Oysters each.

The cowboy rushed into to saloon yelling,
"All right, who's the wise guy that painted my horse yellow?"
There was silence in the saloon.
'Fess up if you dare," shouted the cowboy.
With that, the biggest, meanest-looking hombre he had ever seen got
up from one of the tables, rested his hands on his gun handles and
coolly stated, "I did, whaddaya want to tell me?"
The cowboy looked up and down at this terrifying figure...
