Still getting ready for our trip, so much to do, so little time! I
want to thank everyone for their great suggestions on what to visit
while we are there. The problem is, I want to do it all! Georgette is
not a happy camper right now, she has to stay home!

Oyster Boudin
4 dozen Louisiana Oysters
3 oz. Tasso
3 oz. Bacon Fat
3 Stalks Celery, finely diced
2 Green Bell Peppers, finely diced
2 Fresh Chili Peppers, chopped
1 Bunch Green Onions, chopped
1 Onion, finely diced
1/2 Bunch Parsley
2 cups Rice
2 cups Veal Stock
1 cup Oyster Liquor
1 Tbsp. Garlic
2 tsp. Dried Thyme
Salt, White and Cayenne Pepper - to taste
Bread Crumbs - to thicken
Red Chili Cilantro - for garnish
Render tasso in bacon fat, then add onions, celery and bell peppers; sauté until translucent; add chili peppers, thyme, garlic and
sauté
until garlic is blonde. Add rice and de-glaze with Oyster Liquor;
add veal stock and seasonings; bring to a boil, then reduce heat and
simmer; add green onions, parsley and Oysters. Cover and simmer,
stirring occasionally until rice is well cooked; adjust seasonings (it should be spicy). Add bread crumbs (approximately 3 oz.) to
thicken. Allow mixture to cool and pass through a grinder using a
small die. Form into cakes approximately 2 oz. each, similar to Crab
Cakes. Lightly flour and sauté. Serve with Creole mustard cream
sauce and garnish with red chili cilantro and fired Oysters.
Servings per Recipe: 25 (2 oz.) cakes

"I'm having trouble finding a recipe for made from scratch pineapple
upside down cake. All I can find is made from a cake mix. All I
really need is the yellow cake part. if I can get one it would make
my day. Light and fluffy. All mine seem to turn out heavy and dry.
The birds are getting fat around my house with all the failures I've
given to them! So, if just one person or more can help me, I will be

I was out walking with my 4 year old daughter. She picked up
something off the ground and started to put it in her mouth.
I took the item away from her and I asked her not to do that.
"Why?" my daughter asked
" Because it's been laying outside, you don't know where it's been,
it's dirty and probably has germs" I replied.
At this point, my daughter looked at me with total admiration and
