Mexican Pizza Recipe, Funny Car Joke... - February 23, 2005

Hi Y'all,
Okay everyone, heads up! We asked for feedback on the
Cooking
Recipes blog, and you know what? We have had about 3 answers. We have
over 6700 members, so that is not a very good return! I know, I know,
lot's of folks are busy, lot's of folks don't like change, we
understand that, we don't either. But sometimes change is good! So
come on, when you get a chance, just drop us a line to let us know
what you think. How are we supposed to know if someone doesn't tell
us? If there is something you don't understand, please just ask! If
you can't figure out how to post, just ask us to do it for you. This
change is not only for us, but for you also.

Today's Recipe:
Mexican Pizza
1/2 lb. ground beef
3 Tbls. Taco Seasoning
2 Tbls. water
8 sm. flour tortillas
1 cup refried beans - warmed
2/3 cup mild picante sauce OR salsa
1 cup shredded cheddar/Monterey Jack cheese blend
1/4 cup chopped tomatoes
1/4 cup chopped green onions
Using your hands, mix together beef, taco seasoning, and water.
-Brown the beef mixture in a skillet over medium-high heat for 5-6
minutes, using a wooden spoon or spatula to break up the meat as it
cooks; set aside.
-In 375 degree oil, fry tortillas for 30-45 seconds per side, keeping
as flat as possible and popping any bubbles that may form; drain on
brown paper bags.
-Spread beans, then meat, then picante sauce/salsa over 4 of the
tortillas; set aside.
-Spread cheese, then tomatoes, then onions over remaining tortillas;
stack one of these tortillas on each of the others.
-Place pizzas under a hot broiler just until cheese has melted.

Wine and the car accident
A woman and a man are involved in a car accident, and it's a bad one.
Both of their cars are totally demolished. Amazingly, neither of them
are hurt. After they crawl out of their cars, the woman says, "So you're a man, that's interesting. I'm a woman. Wow, just look at our cars!
There's nothing left but fortunately we are unhurt. This must be a
sign from God that we should meet and be friends and live together in
peace for the rest of our days." The man replied, "I agree with you
completely. This must be a sign from God!" The woman continued, "And
look at this, here's another miracle. My car is completely demolished
but this bottle of wine didn't break. Surely God wants us to drink
this wine and celebrate our good fortune...
