Leftover Eggs Recipes, Blonde Joke...Mar 30 2005

We hope you are having a great week so far. Georgette has finally
calmed herself down today! :o)

Today's Recipes are for help using up those boiled Easter eggs!
~~Scalloped Eggs~~
8 hard boiled eggs
about 3/4 C milk, half & half or cream
about 3/4 C seasoned breadcrumbs
about 2 T butter
salt and pepper to taste
Optional:
4 slices crumbled cooked bacon
Serves 4-8
Pre-heat oven to 350 degrees.
Grease an 8" square glass baking dish and cover bottom with a layer
of crumbs. Place a layer of sliced hard boiled eggs, then sprinkle
with crumbled bacon if using, dot with a few bits of butter, then
repeat this layer process, finishing with a layer of buttered crumbs.
Pour cream, milk or half and half over the whole dish until it comes
about halfway up the side of the dish. Place in oven until heated and
browned, about 4-6 minutes.
~~Snappy Ham & Egg Rolls~~
Ingredients:
2 hard-boiled eggs, peeled and finely chopped
1 – 4 1/2 oz. can deviled ham
1 tsp. mustard
½ cup crushed potato chips
Sour Cream Sauce ingredients:
1/2 cup sour cream
4 tablespoons ketchup
1/2 teaspoon seasoned salt
Directions:
1. Combine deviled ham, eggs and mustard. Stir together and chill.
2. Roll mixture into balls. Chill well again.
3. Just before serving, roll egg & ham balls in crushed potato chips.
4. Combine ingredients for Sour Cream Sauce and serve as a dip.

Green Side Up Blonde Joke
A woman hired a contractor to repaint the interior of her house. The
woman walked the man through the second floor of her home and told
him what colors she wanted for each room. As they walked through the
first room, the woman said, "I think I would like this room in a
cream color."
The contractor wrote on his clipboard, walked to the window, open edit and yelled out, "Green side up!" He then closed the window and
continued following the woman to the next room. The woman looked confused, but proceeded with her tour. "In this room, I was
thinking of an off blue." Again, the contractor wrote this down, went to
the window, opened it and yelled out, "Green side up!"
This baffled the woman, but she was hesitant to say anything. In the next room, the woman said she would like it painted in a light
rose color. And once more, the contractor opened the window and yelled, "Green side up!" ...
