Today's Recipe:
Easy Shrimp Creole
1 can crushed tomatoes (16 oz.)
1 medium onion, chopped
1 medium green pepper, chopped
1/2 tsp. pepper
1/2 tsp. chili powder
1/4 tsp. cayenne pepper
1 medium bay leaf
1 lb. small or medium Shrimp, shelled and deveined (or Scallops)
Combine all ingredients except Shrimp. Microwave until boiling. Add Shrimp.
Microwave about 8 minutes or until Shrimp are just cooked. Rest 5 minutes. Serve
over rice.
