Down Home Garden Eggs Recipe, In A Vacuum Joke- September 04, 2004

Hi Y'all,

Nasty weather is heading towards Florida especially, although other states and countries may be affected. Our hearts go out to everyone in its path. You just got rid of Charley, and now you have Frances. Just please, if you are told to evacuate, do it! This is a really big storm, and supposed to be twice the size of Charley and Andrew! Take Care!

Down Home Garden Eggs

12 eggs
1/4 cup water
Salt and pepper to taste
1 tablespoon butter or margarine
1/4 pound mushrooms, sliced
1 small green bell pepper, chopped
1 zucchini, coarsely chopped
1 tomato, coarsely chopped
3/4 cup Cheez Whiz, melted

Beat eggs and water. Season with salt and pepper.

Melt butter in frying pan, and add egg mixture. Scramble just until moist. Place in large oven-proof dish and keep warm in oven.

Melt remaining butter in frying pan and saute all vegetables until tender crisp. Spoon over eggs. Drizzle Cheez Whiz over top of eggs.

Serve with toast or fresh homemade muffins.
