Cajun Fried Catfish Recipe, Doctor Joke...August 02 2005

Hi Y'all,
Welcome to all of our members!
Wow, looks like someone has it in for us! Thunderstorms almost every
single day, or night. This is the house rattling, concrete hitting,
jump out of your skin thunder and lightning, and torrential rain!

Cajun Fried Catfish (or Perch, saccolet, and bass too).

Look Ya'll's,

Cookin fish "Cajun "style don't require much,.. just watch out for
the recipes that are too large with seasonings.

I'm born 'n raised in Louisiana...and all we ever did to fry fish
was this.

2 Cups of cornmeal
1 tbsp salt
1 tsp black pepper
and a couple shakes of "Tony Cachere's seasoning (Optional)

the egg wash is like this:
1 egg
1/2 cup of milk
a little salt,
a little pepper
and some tony's seasoning (optional)

Directions;

Preheat some cooking oil in the deep fryer to 350*F

Mix up ur egg wash first...

Take your fish filets and wash them to clean them in cold water.
then slice them to the size you want to fry.

Float them in the egg wash.. then roll em in the corn meal mixture,
just one time only.

Drop them into the hot oil and fry til a nice golden brown color.

Enjoy!

Eat with "Steve's Killer Hushpuppies"

Fried okra goes good with this too.
